Bridget Evitt was sponsor on baptisms of relatives in 1885 and 1890 in New Ross, so still there in 1890.

This Bridget never married apparently and worked as a domestic  - see Noel's comment Bridget was working as a domestic. 'Not quite sure whether here or in the UK. She never married and died back in Irelandim the Midlands.' Wexford has found her as a Evitt sponsoring family up to 1890.

So Bridget Furlong as an aunt may be someone different. 

Actually Noel may have all of this. 

The search for the birth/ancestors of George Evatt we know these bits

Father was John and was a coachman, as in George's marriage certificate to Mary Kirwan.  George was born in 1833 somewhere in Ireland

Yes, someone different - I think she is the sister of Mary Kirwan, and hence the aunt of Mary Evitt, born 1890.
