The easiest way by far is to use your iPhone.

Use an App called Luma Fusion.

Import the video into the App and use the timeline controls to position the cursor on the frame you want.

Export > Snapshot

Export is saved to Photos

Job Done, took me all of 10s to load a video, select and export.

Luma Fusion is a great Video Editing App, I use it in preference to the Pro level Editing Software that I have (I have edited video for over 35 years).

Thanks, I've now downloaded the software, but it doesn't seem to want to know a .mov file. It flashes up on the screen for a millisecond and is then replaced by traffic cone!
I get the same thing (without traffic cone) with Irfan view which I tried first

VLC reads .mov files so that is very strange. Tested one again just now in case they had dropped support but it opened and played without a problem. Traffic cone is standard and indicates there is no video playing.
