I had a look on FindMyPast for any occupational records for Thomas Barnes born 5 years either side of 1880 and could not find anything.
Researching:

Both Louisa and Matilda name their father as Robert Barnes (deceased) when they marry. Matilda's marriage has fish curer as an occupation for him.

In 1881 there is just Thomas with his parents - father Robert is a fish curer.

In 1891 Thomas age 10 is with his parents Robert & Catherine in Limehouse, also sisters Louisa 8 and Harriet 2. 

In 1901 father Robert has died and Catherine is in Eastfield St with dtrs Louisa and Matilda. We at least know that he was not still living with his family  :)

The address on 1881 census above posted by Rosie 165 Eastfield St

There's this baptism for
Thomas Barnes

Father   Robert Barnes occ costermonger
Mother   Katharine Emily res 165 Eastfield St

Also these baptisms same parents, father same occupation address Eastfield Street different house numbers 123 & 125

Sorry to have taken so long to reply, but RC shut me out - Database Error. I was only able to access a limited number of threads, and then it shut me out completely. Seems OK today, though, thank goodness!
