I can't find this lady's will on the UG Gov probate website. I've tried (I think) every combination but still get a "0" documents result.

Does the fact that her will was "resealed" for Kenya interests mean its not available in the UK?

I found it without any trouble.

On the first search page, use 1957 (the probate year) as the year of death. Don't enter any info on the 2nd search page, just save and continue.

I'm after a copy of her actual will, not just the probate calendar entry. I've ordered several wills of other people in the past but can't find Winifred... very odd!

Still puzzled... but thanks for trying.

I'm sure someone will correct me if I am wrong but I don't think you can find Wills on the Probate site, just when probate was granted and to whom.

I'm not clear from this response whether you mean that you have submitted an order on the HMCTS website using the information contained in the calendar, and had the order returned as unfound, or something else. If it is the former, then that suggests the will may not be availbale in the UK, perhaps due to the resealing in Kenya. In my experience the IronMountain staff who deal with normal orders don't understand the resealing process, and you will probably need to take up your case with the probate registry staff, using this link: https://www.find-court-tribunal.service.gov.uk/courts/newcastle-district-probate-registry 
Don't expect this to be a simple experience.  You will need to complete a PA15 form and submit it along with the current fee (it was £1.50 in February 2024 but may have gone up in line with the standard ordering service) and a search fee (£3 in 2024) to the Newcastle office of the Probate service (address will be given to you along with a copy of the form when you first contact them).
I had to follow this process in 2024 for a will which had been proved in Barbados and resealed in London.

I've not ordered Winifred's will yet as I can't find it.

I'm using the https://probatesearch.service.gov.uk/#wills website but - trying the possible name variations - I can't turn up the will document that I'd like to order.

I'll follow your advice...

the answer ShaunJ gave you earlier is taken from the https://probatesearch.service.gov.uk/#wills website. You may be filling in too much information in your search. Just use the surname and year of death and nothing else. That should bring a page or two of Tennants,  and after you have found Winifred's entry you then need to transfer the relevant parts of the calendar entry into the order form on the right hand side of the page.
