I can't find a Quarmby/Uttridge or Utteridge marriage.

The birth cert will show whether the mother was "Uttridge" or nee Uttridge.  If the former - it may suggest there was no marriage but Mr Quarmby admitted paternity & attended the birth registration.

If that is the case - we are looking for an Uttridge/Utteridge marriage to an Ashton which can't be found at the moment

You really need the names from the birth cert

Until the parents names on the birth cert are known - the following is just guesswork

Betsy Jane was possibly illegitimate & was "adopted" by a family called Ashton hence her believing that was her maiden name??

If you look at the marriage cert - one of the witnesses was William Edward Ashton

The witness William Edward Ashton appears on the census records as a brother to Betsy Jane Aston.
William Edward married Ellen Walker in 1898, but his marriage certificate was also amended in October 1932.
“Inventory no. 198 Col 2 for Ashton read Aston otherwise Cranbury and in Col 7 For Ashton read Cranbury” signed by the vicar, and both bride and groom.

This is his birth certificate
CRANBURY, WILLIAM  EDWARD                  Mother - UTTERIDGE
GRO Reference: 1876  D Quarter in BLACKBURN  Volume 08E  Page 455

Another sibling Emily Ashton married Albert Armitage in 1901
Also on her marriage certificate date May 1931 was the same correction.
Instead of Emily Ashton read Emily Quambury and the father’s name changed to William Quambury.

Her birth
QUAMBURY, EMILY          Mother - UTTERIDGE
GRO Reference: 1875  M Quarter in BLACKBURN  Volume 08E  Page 478

The parents to the above three people :-

Betsy UTTERIDGE (age 48) born 1854 Helpstone, Northampton
William QUANBURY (age 48) born 1852 Bourne, Lincolnshire
They married in Bradford on 2nd July 1900
His father is recorded as William Quanbury - blacksmith deceased
Her father William Utteridge – Hawker

William and Betsy obviously had been living together for many years using the surname ASHTON and had several children whose births were recorded as QUAMBURY.

Obviously something happened in the early 1930s, and the children got their birth certificates, and discovered their true surname.
Notice that the spelling on their individual birth certificates is the same as that on their marriage amendment.
