William Oliver ...missing from census records

Dear Listers
I'm trying to fill in some gaps regarding a late ancestor William Oliver who lived in Cawsand.
Born 11/09/1805 married Mary Dunstone 9/8/1831 and died 18.9.1882.
He worked as a fisherman and pilotsman in Cawsand and looking at census records between 1841-1861 he is either at sea or somewhere else.
I'm trying to find out more about his life, his parents and why he was away so much - assume that a pilotsman was a tough job but do not know much about that either.
Any help or pointers very much appreciated

Thanks very much....just returned from Cawsand and I wonder which pub he was a landlord of? Unfortunately I can't access the census records of 1841 to see the address in Cawsand

Thank you. I was told that William's arents were William and Elizabeth (Paul) Oliver but wasn't sure how to check this as it's before the census records began?
