Suffolk records 1300s

I have located an individual in the 1327 Subsidy roll for Hoxne cum Denham, Suffolk. I have a fair idea of where he came from, but have no further knowledge of the probable descendant until 1382 in the Redstone Deeds (Suffolk Archives), as a withess to conveyance.
1) What are the requirements to be charged a Subsidy Roll, eg age, land owner etc?
2) Is there a minimum age to be a Witness to deeds?
Are there any records available which may help in this time period, in the Stradbroke and Hoxne areas? (Preferably online, as I am in Australia)

Any suggestions appreciated.

The 1327 Subsidy was a tax on moveable goods. They didn't have to be landowners. The minimum value of goods taxed was ten shillings, so paupers were exempt.

For the 14th century, you could try Chancery rolls: Close Rolls, Fine Rolls, and Patent Rolls.

One other question - what age must an individual be to withess deeds in late 1300s

I think they'd have to be legally adults, so 21.
