Seeking Ann DEERING born c.1780

I'm looking for an Ann DEERING who appears on the 1851 Census for Lewes St. John under the Castle.

Ann is described as a widow aged 70, supposedly born in Arlington Sussex.

She is living with her brother James PAYNE a widower aged 59 born in Ditchling.

Please can anyone help me find her birth/baptism and marriage?

Ann aged 59, with husband Henry 65 and son, also Henry, aged 20.

Possible marriage - Hellingly - 20 January 1804

Henry Deering (although he signs as Dearing) and Ann Lambert (x) both of this parish.

Baptism    4 Nov 1781 Arlington, Sussex
Father    Heny. Lambert
Mother    Eliz: Lambert

Not worked out why her brother as the surname Payne
