Well this is a tough one.
I have either
Joseph and Benjamin bapt Bishops Tachbrook 23/26 Sep 1776 sons of James Burton and Mary Gilbert who married at Newbold on Avon 14.10.1776 .Bondsman William Cooper.
James is the carpenter who dies 1778 leaving a Will but no mention of Benjamin or Joseph.Wife Mary and sons Richard and James, from his first marriage to Sarah Smith 27.5.1757 Dunchurch.
The other following Thomas Burton widower who married Susannah Robins 1819 Dunchurch ,was bapt 24.5.1763 at Newbold s of Christopher and Mary. But there is a gap between their children 1773-1777 and no Joseph .They are of Thurlaston.
I can't track Catherine Cooper.

I note Joseph & Ann’s youngest son was James, so have you considered below what appears to be Twins.

I’m glad for once that I hadn’t been needlessly stuck on this for over four years now!
I’ve definitely looked into James and Mary before but hadn’t found the baptisms from Bishop’s Tachbrook. It’s not too far away so I think it’s a possibility. I remember the baptism for William Burton in Dunchurch in 1777 with abode of Thurlaston and reading Jame’s will, with as you mention no mention of Joseph. I did check when the will was written but it was in 1777.
I mean the fact that we have a Benjamin & Joseph Burton (born 1776) is promising in of itself. Joseph and Ann’s first two children are Benjamin (b. 1807) and Joseph (b. 1810).
The bondsman is interesting in the marriage that ciderdrinker found as it matches the second name of the witness.
Joseph Burton (d. 1841) was a labourer formerly a X (sadly I can’t read this). His first son does become a Sawyer though, so woodwork related.
I see you have found another James and Mary Colin, I’ll be sure to track this one back too.

EDIT: There appears to be a marriage record in Dunchurch for James Burton and Mary Gilbert too. James Burton OTP widower and Mary Gilbert OTP of Newbold Upon Avon were married in this church by licence 16th Oct 1776 - also means these children were born out of wedlock?
Though when I look for Richard Burton, "Richard son of James and Mary Burton of Thurlaston was baptised Dec 2nd 1764" Dunchurch. Although with James (b. 1761) I do get Sarah.
