I have carried out extensive research of the de l'Epaule (and numerous other spellings) family from their likely origins in Sedan, Ardennes, France to my great grandmother Eliza Charlotte Shoulder, who was born Shoreditch in 1853.
The French name (épaule=Shoulder) was anglicized to Shoulder in the late 17th and early 18th centuries, especially as they began to move to the C of E for marriages and burials, both versions often being used for individuals at some time during their lives. One good example is Mathieu De l'Espaule (baptised 1677), Matthew D'Shoulder (Marriage 1711) and Matthew Lepaule (burial 1765).
I believe that Mattieu's father Jacob de l'Espaule (de l'Epaule and Lapole at his two marriages and Shoalder [sic] at burial) may have been the brother of Pierre, the (compelling, but not conclusive) evidence of that being that Jacob Delepaule was the godfather of Pierre & Marie's son Jacob and Marie Henro was the godmother of my Jacob & Catherine's son Matthieu.
Jacob's (and possibly Pierre's) parents were Charles de l'Epaule and Rachel Ouberlan/Huberlan, who married in 1642 in Sedan. Jacob was said to be a native of Paris at his 1676 marriage in London. Unfortunately I have not found Pierre & Marie's marrige record.
