Some ships taking regiments and drafts of individuals to and from India, the Cape or elsewhere in the Mediterranean will usually have called in at Gibraltar en route to take on fresh water, rations and deliver mail etc, but they won't be listed in the Stations of the British Army that Shaun mentioned. You may be able to deduce/guess which they are by looking at the dates units moved to and from these places, but that won't give you precise dates.
This was before the electric telegraph had been invented so ship reporting was haphazard. The shipping news carried by some newspapers might also give details of arrivals to and departures from the UK of complete units, but the drafts (often as few as 20 men) probably won't get mentioned.
