There are presumably new DNA tests being taken on a regular basis - so, does Ancestry DNA update my DNA results with matches from the results of new tests ?

Yes.

In your DNA match list on the left of each entry there is a Green dot to show that there is a DNA match that you have not reviewed.

In the Filter section there is the option to check the “New” box which will also show the number of new DNA matches that you have received since you last checked.  Just checked my Wife’s matches and she has had 7 new ones included in the last 7 days.

For me looking at new DNA matches is a task I undertake once a week with each of the DNA tests that we manage.

It is also worth remembering that DNA test kits are often given as presents not just for birthday’s but for Mother’s Day, Father’s Day, Thanksgiving, Christmas etc & this can result in a extra influx of DNA matches some 8 weeks later.

Matches are assigned as 'Parent 1', 'Parent 2' 'unassigned' or 'both sides'. Focus on the parent 1 and parent 2 matches to help work out which parent is which. It's easy to change the labels to maternal and paternal and the change will be applied to all assigned matches and to new matches as they appear.

Hope it  comes up with what  I want   my gr grandfather was Swedish but it never came up on  my DNA, disappointed  to be honest .

Yes, we were also disappointed in the results - the closest matches were a few very distant cousins - and the list of matches is so long, that I gave up reading it halfway through.
Until a huge proportion of the world's population test their DNA, there are probably going to be quite a lot of disappointed people like Louisa Maud and me

Alas DNA is not a magic wand tool, it can and does help, but it can also be very frustrating.

In the 8 years since I took a DNA test I have added 157 matches to my family trees, and 130 to my Wife’s family tree.

Included in those matches is finding my older half Sister who I never knew about until last year and I am 75 years old.

DNA can be and in my case is, life changing even at my age.
