Hopefully not being too pessimistic but some realism is needed here about the types of records kept in Ireland in the 1800s. Written records for servants weren’t a high priority. I have often been asked to try and find estate records that record labourers and servants. Mostly their lives were lived below officialdom’s radar. Once in a whole you do find something, but in general folk like that were on unwritten leases and unwritten employment terms. They moved about all the time and few records exist unless they did something spectacular that hit the headlines. They might be in Griffiths if they had a house of their own, and they might be in the 1901 & 1911 censuses but if they were a servant working at Castle Upton in the mid 1800s, they may not appear in any estate records nor any government records. It just wasn’t data anyone then felt needed recording.
