No, they are enumerated at their holiday digs.  Sometimes there is a note on the on the enumeration form of their home address to say they are on hols.  Some even say where! These don't necessarily make it into the name index.

Surely if it's a business address with no one resident there,then there wouldn't be a census form completed there?

When I was an enumerator for the 81,91,and 2001 censuses we were told to only leave them at addresses where people lived.

My OH's G Grandparents and their family were enumerated in 1921, their address was also their shop address (I believe they lived above the shop). It was also the address on the children's birth certificates and marriage certificates for at least 3 of them.

The names I am looking for are,
John Evans, GF,  born 1881 in Liverpool
Elizabeth Ann Evans, GM, born 1883 in Warrington
Lilian Mary Evans, Aunt, born 1907 in Warrington
John Francis Evans, Father, born 1911 in Warrington
Sydney Thomas Evans, Uncle, born 1914 in Warrington

Possible places,
110 Algernon St, Warrington
444 & 446 Ashton Old Road, Openshaw, Manchester

I did also try the whole of Lancashire but returned no obvious results.

I would suggest you do a search nationally to see if they were on holiday. As others have mentioned if you hover the mouse above the ink it will show the other residents.   

I live in a holiday area of North Wales and the 1921 census entries O have looked at for our town have many people from the North West of England and the Midlands staying on various hotels - I've been trying to track an aunt or two who worked at a hotel so everytime I have a bit spare I'll buy another couple of images !

That's the one, can I ask where you are looking at the directory from, I couldn't find any online.
Ancestry only seems to go down to 1933?

The 1929 Directory is on Ancestry. I just searched for "Ashton Old Road" as a keyword.
