7 children born in NZ (I have all the dates/ certs) Charles' birthplaces are stated as London in some and Hampshire in others.

He lived in Hobsonville, Auckland, and was on the School Board there.
d. 24 Mar 1904
Buried: Hamilton East Cemetery with wife and daughter Ruby.

What does his death certificate say?

It does look as though the family of Alexander Ellice and Ann née Russell is connected in some way - but none of the trees on Ancestry seem to include your Charles.

The name Churchill is the only one which doesn't appear in the Ellice famiy.

I understand that a NZ marriage certificate from 1878 won't include any parents' details, but does Charles' death cert provide any clues?

In 1851, there is a Charles W Ellice born about 1842 London a boarder in Huddersfield.
A couple of doors away is an Elizabeth Ellice born about 1821 Huddersfield, Servant
HO 107 Piece 2295 Folio 614 Page 1515

No parents on NZ marriages before 1880 . But Death cert should have what ever the informant knew about that, hence request to know if OP has that.
