Knowsley is still a village today, all who lived there would have worked on the Earl of Derby's estate http://archives.knowsley.gov.uk/knowsley-village/history-of-the-knowsley-estate/ The church mainly used by the people of Knowsley would have been at the ancient parish church of St Michael's in Huyton https://www.genuki.org.uk/big/eng/LAN/Huyton/StMichael or possibly St Mary's Parish Church in Prescot https://www.genuki.org.uk/big/eng/LAN/Prescot/StMary.
There are numerous Hitcheons/Hutchen in Huyton parish records in the C17.
POWELL - Liverpool and Wirral
ADAIR - Liverpool and Ireland
BAUGH - Shropshire, Staffordshire and Yorkshire
WILKINSON - Staffordshire

".. I got his birth cert from England"

Can you please identify the birth you have found.

"..(his father) Henry Hitchens, I have him in the 1851 census with his wife and children.."

Can you please identify the 1851 Census entry so that people on the forum can see it too.

Do you have a printout of this record -

NZ BDM marriage
1865/5522   Margaret   ELLENSWORTH   marr.   Henry Albert Holland   HITCHENS

Among names for their children there is QUINTON used as given name, so likely this appears as an earlier family name, and, hopefully, from the HITCHENS side of the family.

The marriage certificate will not ask for parents' names but will name witnesses....grooms occupation.....church where they are married. Witnesses might be relatives.

Using BDM NZ Index I see QUINTONs in New Zealand.
