I am a little puzzled by that 1871 as in 1861

Name   Age
William Baines   30 - b Haydock
Ann Baines   29 - b Leeds
Mary Baines   7   - b Hindley
Thos Baines   5   - b haydock
Ann Baines   3   - b Haydock
William Baines   1   - b Haydock
John G Bibby   20
Martha Meredith   60
Samuel Meredith   27
Margaret Meredith   18
William Meredith   15
Martha Banks   22
Thomas Meakam   20
John Banks   3
Elizabeth Banks   6/12

no mention of Sunderland and the baptism on lan-opc match those places of birth for the children

I agree.

I was working from the 1871 census, and trying to find a pattern of births in the 2 areas, as older children claimed to be born Sunderland, and the 2 younger in Haydock.  Also Ann says Leeds in 1871.

Presumably they got the year of birth of their son wrong, as it definitely says 1866:

If it's any help Thomas, a collier, was William Baines/Baynes father, and Ann Astin or Austin was his mother.
In 1841 William is in Haydock with these parents, and older siblings Sarah and Thomas, as well as younger siblings David and Mary.
Thomas and Ann married in 1823.
Threlfall (Southport), Isherwood (lancs & Canada), Newbould + Topliss(Derby), Keating & Cummins (Ireland + lancs), Fisher, Strong& Casson (all Cumberland) & Downie & Bowie, Linlithgow area Scotland . Also interested in Leigh& Burrows,(Lancashire) Griffiths (Shropshire & lancs), Leaver (Lancs/Yorks) & Anderson(Cumberland and very elusive)

David should be the 7th child:
(ages from 1861 and 1871 censuses)
Mary about 1854, Thomas about 1856, Ann about 1858, William about 1860, Ellen about 1863, Elizabeth about 1864 and David about 1867.
