That is where you have a problem!  Born 2 days before New Year, in that his Birth was most likely Registered in early 1920 and only Registered Births up to end of 1919 are online!

Brilliant! Thank you, was confused at first as it said mother’s birth surname was McCarthy but clicked on the transcript and it said Murphy, I’m sure my family will be pleased

So is the thinking the mother's maiden name has been incorrectly put as McCarthy on Irish Genealogy.

Mother's Birth name is wrong.... it should be Murphy.

Had it in my head that Joseph was born June 1883, not sure where I’ve got that idea as 1911 census only says he was 28 at the time, time to start searching again!🤯🤯

He says in 1911 he was born in Waterford City
The only birth is a Joseph McCarthy born 1882 but the father is William, mother Elizabeth Lambert, the only way this could be correct is if the 1907 marriage cert is incorrect and his father is not James.

Its possible the church record of his marriage has his mother's name recorded but that isn't online, a transcript might be on RootsIreland but that is a subscription site.

found the following on rootsireland, so am going to double-check other josephs. Will question whether the family could've come from different areas too.
