Death in Canada?

In researching my 3xgreat-grandmother Eliza Moyes I discovered that her father seems to have died in Canada.

Her father was George Moyes, a stonemason, born in 1822 in North Moulton, Devon, and his father was John Moyes. In 1845 George was living in St Helier, Jersey, and married Elizabeth Hill (b.1824), they had 2 daughters, Eliza (b.1848) and Celia (b.1857), who was born in Upper Canada.

In the 1871 Channel Island census, Elizabeth and the daughters are back living on Jersey, but no sign of George. Also, just for interest, boarding at the same house as Celia is one John Reese, my 3xgreat grandfather, who had recently retired from the Army, having most recently been stationed in.....Canada.

Can anyone help fill in the blanks as to what happened to George, and if possible who his mother was?

1861 Canadian Census puts the family in St. Lawrence Ward, Hamilton, Wentworth County, Canada West (now Ontario, formerly Upper Canada):

Moyes, Geo., mason, b. England, Church of England, aged 27, married
Moyes, Eliz., b. England, aged 35, married
Moyes, Eliza, b. Jersey, aged 18?, servant (residence out of limits = St. Mary's Ward)
Moyes, Cecilia, b. Upper Canada, aged 4

The age gap between the girls and Elizabeth's age being older than George suggests a second marriage for Elizabeth, and that the daughter Eliza may be from her first marriage.

That could be 13 which would match a birth in 1848 in Jersey ... the ink is kind of blotchy

George Moyes, mason, house on Catharina [St?] near Catharine, or maybe north of Catharine

he's not in an 1866 directory, or an 1867-1868 directory

in 1853: a Jane Moys at 104 Rebecca, but no George or James

There is a George Moyse baptized 29 July 1821 in North Moulton, Devon, son of John Moyse and Ann. according to an index, no image available.

 son Charles, age 1.

He stayed in Ontario and died there in 1903.

His middle name on some of the records was Rowel or Rule. That might be a clue to his mother's name.

On the 1871 Census of Canada he says he was born in England, but his wife and first son were born on the Isle of Jersey. In 1901 he says England, he is living with his daughter Selina Robinson in London, Ontario.
