I can't help with the 51 but will post this from 1841 in case it turns out to your Jasper (no Jasper Guys in Somerset but Sherborne is not that far from Crewkerne)

Hi there =  In 1851, Jasper Guy (now 30) was living in the house of Charles (27) and Eliza (21) Gale - and their little daughter Elizabeth (2) and little son John (1) - and was employed as a house servant, with his wife Joanna and daughters Elizabeth, Sarah, and Mary Jane (6 months), and son William (5). His youngest son Samuel was born in 1858.
In 1861, he was still in Sherborne with his wife and daughters Elizabeth and Sarah (aged about 12) – where are Mary James and William - and little Samuel (aged 3). Jasper Guy was now a farm labourer; but somehow, later, he became a gentleman’s dresser – he is described also as ‘servant at Mr Penny’s’.
Most likely this was The Reverend Charles Penny of Abbey Street (Hunt & Co.'s Directory of Dorsetshire, Hampshire, & Wiltshire 1851).
