Then maybe that baptism record in 1859 is for your Lizzie.
1862 didn't look right, based on the 1870 and 1880 censuses, but I wanted to see if you had anything else on her.
If you have a subscription to a site that has indexed the parish registers, you might be able to find the other children. Or if you keep an eye out, they sometimes have free weekends. Ancestry.co.uk just had a free weekend for Irish and British records a couple weeks ago. findmypast.ie has free weekends as well. Maybe someone will do the same for St. Patrick's Day.
I also looked at Griffith's valuation for a Bernard Dolan in Roscommon who was renting a house but no land, figuring that a shoemaker might do things that way. But all the ones I found were renting land. So no help there. He is probably one of the men on the list, and farmed some land besides being a shoemaker.
