An Eleanor Hulbert infant dtr of a John & Sarah was buried at Melksham 27 Mar 1800

I knew nothing about Eleanor at all.
With regards to John and Sarah, I have yet been able to find anything concrete about them
ie
Marriage
Birth
Death
Sarah's maiden name

The only info I can find so far is on the records you have mentioned here, I have been able to find those on FindMyPast, but each time it has a blank for Sarah's maiden name.

Have you found John/Sarah on 1841 (or later) census?

I can find a John/Sarah marriage in Wiltshire, but in 1777, which is too early. They might have moved from another county.   :-\

I have not found them on a census yet, I haven't checked census records before in the UK, so that was going to be my next step

Baptisms do not generally give maiden names of mothers.  If there are two surnames on a baptism it is often an illegitimate birth with both parents named.

I am not seeing a marriage at the moment for John & Sarah close to Melksham though I did wonder whether this was worth making a note of just in case.

They were both of the parish.

There also seems to be a Sarah Bennett who married a John Hulbert in Bath (about 12 miles away from Melksham) in 1799, which would seem quite promising

Have you tried locating Mary & Susanna to see when they were born.  I see they were baptised on the same day and Solomon 2 months later.
