The GRO  has a death of a Joseph PLURIS aged 27 Dec qtr vol 5 page 227 Hoo Union.  Thus would account for non appearances in the census.

As regards the spelling of the name, they both made their X on the marriage entry, so would probably not have known if the spelling  was right wrong, this would account for many variations.
