I'm no expert, just trying to help.
I believe there is an annual patron in this graveyard - meaning a gathering of Catholic priests to bless the graveyard. Catholic priests do not bless Church of Ireland graveyards hence I assumed it was Catholic. Therefore if the Church was closed or disused, the records could have been moved to the Cathedral.
St. Senan's Church in Templeshannon celebrated it 150th anniversary on Christmas Day 2016 but all records of baptism, marriage etc were help at the Cathedral in Enniscorthy. Hence the reason for my assumption.
Records do exist. It can be frustrating to find records but that's half the fun. In my experience records for 1780-1911 is quite easy, but word of mouth in living history is best from about 1920 to 2016
