Unfortunately it is quite possible that burial records were lost/destroyed or not well kept in the first place. Deaths/burials for Dingwall 1786-1852 and Fodderty 1758-1794 should be on ScotlandsPeople
Have you tried Highland Archives at all? (They also have Police archives 1858-1992.) Depending on how the burial grounds were managed (civil authority rather than church) they may have lair registers. See
