Re-the 1841 ages, even if William & Susannah were 24 or so, they couldn't have a son of 15 though could they?
Re-Charlotte, the Charlotte born 1850/1 married in 1871 [I have the certificate] aged 20 living in Greengate, as is husband James Burton, father William Owen dyer. So as you say, looks like she was the 2nd Charlotte they had.

There is a 15 yr old Catherine Owen in Deansgate but not born in county:
