I could only find 2 baptisms at Coggeshall children of Matthew and Elizabeth Stuck
Matthew born 17 October 1781 bap 16 November
Elizabeth born 17 August 1782 bap 13 September.
Elizabeth Stuck married James Oakley 10 April 1805 Great Coggeshall, witnesses
were Richard Oakley and Sarah Stuck.
Perhaps they moved to another parish for a while.
I also noticed families by the name of Stuck in Bocking and Chelmsford.
From a poll book Matthew was in Coggeshall 1810.
His wife Elizabeth was buried Great Coggeshall, 1 February 1816 age 61.
Matthew was buried Great Coggeshall, 14 June 1841 aged 78

Lucy Stuck and Nathaniel Leaper were witnesses to the marriage of Ephraim Leaper and Mary Ann Agas 4 August 1818
Lucy Stuck married Nathaniel Leaper 27 December 1818, witnesses William Rout and Maria Stuck.
William Rout of Little Coggeshall married Maria Stuck 21 December 1819, witnesses Matthew and Hannah Stuck.
So children Matthew and Elizabeth had siblings Sarah, Maria and Lucy found so far from parish records.
From the 1851 census Mary Stuck age 69 and Hannah Stuck aged 61 both unmarried and deaf are listed as sisters of Maria Rout widow. (William Rout)
