One of my ancestors, William Jenkins, is mentioned in the 1841 census as being in St. Thomas Hospital in South London. Is there any way of finding out why he was there, how long he was there, and when he would have been discharged?

This might help. Looks as if they could be in the London Metropolitan Archives (LMA).
