It appears that Abraham was one of 100 prisoners embarked on the 'Mermaid' on 25th June 1856 for 'public works in Gibraltar'. FindMyPast is playing up a bit at present so haven't been able to look at the actual records of all his entries, though there does appear to be one of him actually in Gibraltar aboard the 'Europa'.

I have just looked at another record from Gibraltar prison, register of prisoners which states that Abraham died in hospital on 19.09.1860.

Thank you Spendlove.  I searched online at National Archives for the name and Millbank Prison and was directed to a Find My Past page where I found this:-

The record is just a line on a register
Abraham Gillott age 35 Married, 4 children, Imp (read or write), Framework Knitter, convicted 7 march 1855, crime: housebreaking after pre con, sentence: ten years PS, received on 16 April 1855, from Nottingham prison, Eight times in prison, removed on 7 dec 1855 to Portland prison.

there are several other records which have already been referred to earlier and also one for an offence committed when he was 23 and sent to Derby prison

Berks / Oxon: Eltham, Annetts, Wiltshire (surname not county), Hawkins, Pembroke, Partridge
Dorset / Hants: Derham, Stride, Purkiss, Sibley
Yorkshire: Pottage, Carr, Blackburn, Depledge
Sussex: Goodyer, Christopher, Trevatt
Lanark: Scott (soldier went to Jersey CI)
Jersey: Fowler, Huelin, Scott

That effectively solves the mystery - deported to Gibraltar and not Australia.  So his wife was correct in describing herself as a widow on the 1861 census.
