Yes I have seen that Probate for Eliza Vincent died Timaru 1951. 

The death and burial is easily found online in the Timaru Cemetery.  I may be wrong but doesn't appear to be my person.  This lady died aged 98 years which makes her date of birth 1853.

The burial of Eliza VINCENT at Timaru Cemetery, has the wrong year entered on the cemetery database >  22 June 1950.

The accompanying headstone photo reveals her date of death to have been 20 June 1951

Further searches show this Eliza (nee PEASE) was the wife of Alfred VINCENT (m. 1876) ... there were numerous children of the union (one of whom was also Eliza VINCENT, bc 1885).
Several online trees state that Eliza PEASE or PEACE, was born in Yorkshire, ENG, 1853.

*  Do you know the name of the mother of Mary VINCENT (nee WILD) ??

In the "Timaru Herald" article you referred to (13 March 1886), Mary's mother is present in Court.   She is named as "Mrs WIST"  (this may of course be a spelling error ??)

Moving forward to  ...

"Timaru Herald"  - 17 February 1900 - Town and County
In the case of Mary VINCENT (who was without means of support ... and had been charged earlier
on 13 or 14 February, 1900), the article goes on to say ...
... the mother of the defendant [Mary VINCENT] attended [the Court hearing] and offered to take charge of her daughter.

... the "Mrs WIST" referred to in the March 1886 Court case, said she had "eight children of her own" to take care of - the reason she was unable to continue caring for her grandchildren (ie. Mary and Joseph VINCENT's children.)

So as Mary VINCENT's mother is seemingly still around in 1900, (and there are probably siblings or step-siblings of Mary), maybe it's worth trying to find these people ?? - (who may in turn lead to finding out what happened to Mary ? )

Died :   18 January 1895

[Note:   This death is not coming up on NZ BDM online)

As we have already seen, there are errors in some (online) cemetery records.   ;D

I realise you have other information that perhaps conflicts with your Mary VINCENT having died before 1900, however, I think it's worth contacting the WDC to see if they have other info for this Mary VINCENT burial.

Further on Joseph VINCENT and testimony from Charlotte WILD (Mary's mother).

Had already found the mother's burial at Waimate Cemetery - d. 20 May 1920 aged 82 years.

If you go (again) to FamilySearch website, you can read the following will >

Charlotte WILD - Waimate - 1920 - widow

Her will was dated 24 April 1912 and it named all of her living children.
There was also a codicil dated 6 November 1917 which sought to re-direct her earlier bequests to three of her children.   (Seems to have been the result of the death of a son (or grandson ?) named Harvey and his legacy was transferred to three of Charlotte's other children).

The last of the children named in the Will of Charlotte WILD, widow of Waimate is

    Mary GRAY (the wife of Robert GRAY)

Am supposing then that this Mary GRAY is the daughter formerly married to VINCENT ??

[Think there may be another twist to this Mary however, but I'm still investigating that.   ;)  ]

You might like to look over NZ BDM deaths for a Mary GRAY ?

The only one I could find that came close in age was >

1936 - GRAY - Mary - 75 years  (bc 1861)        ???

Electoral roll searches are not helping me much at this stage.
