I've found some records that say my gt grandfather was a preacher in Brandon in about 1857. Can I find proof?

Have you found him on the 1861 census? Might give his profession?

The only occupation I ever found for him, till he went to NZ, was a Corn Merchant. Then in NZ he had one of the first department stores. I know he was close to the Baptist Church in NZ, but his parents were Methodist.
That's all I know.

Abit of an outside shot but might be worth looking at a book called Hayloft to Temple by Arthur Patterson. Its a history of Primitive Methodists around Yarmouth in that era but as the preachers often travelled about could be worth a gander. You never know, you might get lucky!

What was his name? A newspaper article might clarify it.
