Hi AussieSearcher
Those PROV records are not on-line but I'm going the the Australian National Library tomorrow so will have a look at the records for your Thomas MOORE.
He is listed the Assisted Passage section, as well as the Unassisted Passenger list, which is the reference you already have.
Assisted ref:
Thomas MOORE, 19, arr JUL 1857, per ESSEX, Book 11A, p 76
Unassisted ref:
Thomas MOORE, 19, arr JUL 1857, per ESSEX, from British port, Fiche 128, p 004
The unassisted lists often record little more than the person's name and age but assisted lists usually have more information.

Essex departed for London in the September carrying gold.
Export entries were passed at the Customs to-day on 80,570 ounces of gold for shipment—30,738 ounces being for London by the Essex, and the remainder for colonial ports. The Essex cleared out with a total of 105,235 ounces, nearly the whole of which was shipped by the banks This is the largest shipment in one bottom for the year. Not sure what a 'bottom' was but that's what the paper says
