I know from my own family history , that stories could be related to junior family members which were not entirely true

. Families tended to hush things up/clam up and not discuss them/ tell little white lies.
That's why I suggested that Sarah perhaps didn't die as young as you were told. She may not have been able to look after her child.
So Sarah jnr took her step grandfathers name when she married.
There is a death for a Sarah Barnes other name Reid in 1931 Stirling with a year of birth 1866. Could that be the first Sarah who raised her grandaughter??
