 I think there may be two hubbies here as the Stabley may be mistranscribed. I cannot track them pre 1881 so playing around with names to see what comes up.

 So not 2 hubbies the surname in 1881 isn't long enough to be Sweeting but someone got it wrong!

 Framwellgate comes under this and thats where they are in 1871.

1871 Martha's p.o.b. looks(to me) like it is dittoed under James' as "Durham City" - but it would still come within Durham reg dist.

so its possible Elizabeth Ann for a while went by her middle name - so possibly her father was named William John or John William and used one or the other - have no evidence of this, though

Thanks for this - certainly the nearest I have found to a possible match. Like you I decided William must be a William John or vice versa as the 1871 census lists a William and Martha living framwellgate, Durham and I am sure Martha Sweeting junior is on here - her 15 year old brothers info and birthplace match up with the 1891 record for Martha sweeting senior. John was born coxhoe about 1855 - it all matches.

The William and Harriet Sweeting, presumed parents of William/John from 1841 census in Market Weighton, are living two doors away from William and Martha in 1871 census, Framwellgate, Durham, on same census page.

William Sweeting, head, 71, b. Cartman, b.Yorkshire,
Harriet     " , wife, 72, b. Yorkshire,
Jane A.    " , Grand dau, 7, b. Durham City.

Some family trees have William Jun. baptized 25 Oct 1829 North Cave Yorks, son of William Sweeting and Harriet Staveley. The Staveley maybe ties in with William/John giving his surname as Stabley in 1881.  William Sweeting married Harriett Staveley 11 June 1829, North Cave Yorks. A few months before William Jnr was baptized.
