Mathew Dalton born abt 1808 Dublin

I am searching for my ancestor Mathew Dalton born about 1808 in Dublin. 
Mathew was working as a waiter when he was convicted of stealing sugar.
Mathew's trial was 5 Oct 1827 in Dublin. He was convicted and sentenced to 7 years transportation.
Mathew arrived in the Colony of New South Wales on 2 June 1828
He married convict woman Jane Greer (born Scotland and convicted Armagh Co.) in 1840 and had a large family in New South Wales.
I have copies of Mathew's available convict records. 
I have not located details of his trial place/court at which the trial was held.
I do not know the names of Mathew's parent.
His religion was given as Roman Catholic and he could sign his name.
Can anyone give me any clues as to where I could find further information about my Mathew?
I've been on the search trail for years and have not been able to knock down this brick wall  :'(

Unfortunately 'Dublin' doesn't really narrow the location down that much, as it covers a city, the suburbs and county Dublin, so quite a few few Catholic parishes to search. Many of these parishes dont have records back as far as 1808.

If your Mathew was born in Dublin City then the place to start is with the free website at www.irishgenealogy.ie. I had a quick look but saw no good matches. Transcripts for quite a few parishes in county Dublin are included on the pay-website at RootsIreland.

Does his death cert not mention any details on his parents ?

Thanks ever so much for the suggestions.  Most appreciated.  I have looked at the suggested websites and so far nothing new that seems to match with my Mathew Dalton.
I was wondering if there is a Dublin newspaper for the 1827 period which is the year that Mathew was convicted? 
Although Mathew was accused and convicted of stealing some sugar, maybe his crime or trial made the newspapers? ???
I didn't mention earlier that the surname has a few spelling variations, just like many others back in those days.

V1840451 24B/1840    DALTON    MATTHEW    GREEN    JANE    MG   

bdm.nsw.gov.au. 

Cost to purchase online is AU 31.00 .  It will  have Mathew's parents listed, if known.

Thanks for the NSW Marriage index info - yes that's the correct couple.  They were married at St Thomas' Church at Mulgoa.  I do have all available records for both Jane and Mathew in NSW - that is convict records including indent TofL and Certs of Freedom etc as well as BDM's not only for them and also for all their children etc.
I appreciate your input.  It's their life in Ireland that I am trying to find info about.

the newspaper to try would probably be Freeman's Journal. It was published in Dublin, but a National newspaper. It's available on a couple of subscription websites (IrishNewArchives, BritishNewspaperArchives etc), and also in various libraries.

As far as I remember only the trials for more serious crimes were reported in any detail. Some 'lessor' crimes are only given a mention..
