I agree with Jennifer and think maybe it was recorded as butcher in 1851 by mistake. This is exciting for me because after years of doing my family history and finding 386 individuals, Francis White is the first person to be born in a country other than England! Looking forward to doing some scottish searching, thanks Ladyhawk for that info on Francis. I looked at my records and I have very little information about Caroline, she is my great-great-great-great grandmother, or I prefer, my great-gran's great-gran! I wonder where the 'Hastings' comes from in her name? Anyway, thanks all for your help
