On Roberts death certificate (1839) and on Catharine's (1866) a woman named Sarah Britten was the witness to the death. That wouldn't necessarily mean a family member, maybe a nurse?

George W Harding married Jane BRITTEN- maybe Sarah Britten is related to Jane???

Could you give further details from marriage cert? Jane's father and his occupation? Also who were witnesses??

Assuming he is illegitimate, would there be special records for them,  or is it a 'hush-huh'? Church records?

There were no "special" records for illegitimate children - their baptisms would be in church records- as the marriage was in Methodist chapel possibly baptism would be Methodist too - so you need to look in non conformist records too

I wonder if there is a relation, although Sarah was on Catharine's death record (1866) and Robert's (1839).

For the certificate here's what I have:

Certificate #38,
Marriage: November 20, 1852
George 20yo/Jane 22yo. George was a Laborer. He lived in Studley Calne, Jane lived in Studley Chippenham. Jane's father wass Joseph Britten. He is listed as a labourer.
Marriage took place at the Primitive Methodist Chapel in Chippenham. 
Witnesses were George Britten and Susana Britten (Which I believe are siblings a few of her siblings.)
The Minister was Rev. Levi Ramsden, and the registrar was Edward Bradbury.
