I wouldn't worry about the 1841 census DoB discrepancy, enumerators were instructed to round down adult ages to the nearest 5 years, so if he was between 30 & 34 his age would have been given as 30 (giving derived YoB 1811).
Phillimore has Milford as a parish in its own right, at the time of publication of my copy the registers were at Hampshire record office although this might have changed because my copy of this very useful tome dates from 1995. Also in 1995 there were no indices or copies held anywhere else. If you've never investigated this parish I would suggest it should be next on your "hit list". Email or phone WSRO to find out if they hold copies, if not they should be able to give you up to date contact details for where they are held.
Once you've found out where the Milford PRs are held, if it's not convenient for you to visit then post a lookup on the appropriate board.
