Not sure what you already have.

Assisted passages to NSW, aboard Forest Monarch, arriving 21 December 1858, sailed from Plymouth or Portsmouth

John GARRICK, 23, labourer, Native Place: Muckart?, Perthshire
Janet GARRICK, 23, wife, Native Place: Tullacoultre?, Clockmanningshire?
Christina GARRICK, 10 months, died on voyage.
Both can read and write, both religion listed as Pres.  Both have same parents listed  ??? - John and Margaret, living in Clockmanningshire? for one of them; the other lists the place as Cloughmanningshire?

The index transcribes them as
Origin Location:   Clormell, County Tipperary, Ireland

A slightly different list gives the same info but his origin is definitely Perthshire and hers looks like: Clackmannan?

The NSW Quarantine Station site gives this information:
1858 The "Forest Monarch" quarantined with 341 emigrants from Southampton. Dr Crane was surgeon superintendent, T.R. Anderson was commander, A.MacFie - first mate, D.Yeates - Mason.

Shipping mention on TROVE

Edit to add - I think the origin is Scotland as I see this address on Googlemap.
Muckhart, Clackmannanshire

Hi (again!) some descendants can be traced from these sons:

Charles Henry Garrick b 1888 d 8/6/1955 (parents George & Fanny)
'Ryersons' (on-line) has d record 'SMH' 9/6/1955 (Ryersons do 'look-up's for family names).

William Thomas Garrick b1907 d19/7/1961 (54yrs) (son of Wm Stewart/Elsie Maud)  (g/son of George & Fanny) d notice 'SMH' 21/7/1961 ('Ryersons' will do a 'look-up'.)

The 'State Library of NSW' (on-line) has an 'Ask a Librarian' service ...they will check electoral rolls for current 'Garrick's if you can give them name of adult male/s and possible areas where to be found.

'White Pages' may also show address ....  once you learn family name/s.

What is the evidence that GEORGE GARRICK who married FANNY HAMILTON is the son of JOHN & JANET?

I have not yet seen  a death for GEORGE which gives the correct parents' names, nor in fact, any further reference to GEORGE and JANET at all ::) I do not see any reference to them in the naming of the children of the union.

I would suggest the purchase of the marriage certificate would be a good step.
