I've had a quick look (5 minutes) on Ancestry and FindMyPast for a Mary born around 1807 marrying a Mr Burrows in Edinburgh 1815-1835, also looked on FindMyPast for 1830s newspaper articles mentioning a Mary Burrows with words like uttering/coin/counterfeit.  I'm afraid nothing relevant turned up.

That is indeed my "Mary Burrows" and she was transported to Tasmania for "uttering base coin" her second offence.
I discovered BURROWS was her maiden name - she did not change her name when married.
She married Alexander McNab.
