The name Bridget also had me curious as when I go through any records I have it doesn't show, perhaps I put it in by error. I am discounting it now.

The marriage certificate I have for Jenkin Jenkins & Catherine states  "Catherine Hughes, widow in 1863, 3 children living 1 dead, of Denbighshire, N. Wales. 28 years old, father Thomas Foulks mother Ellen Davis.

Thomas Hughes died in 1863 so it is the same Catherine married to both.

The name appears as spouse transcribed in the title of an Ancestry.com scanned document/photo which is by description a copy of the wedding certificate to Jenkin Jenkins. The details in the title suggest everything is in order "..Catherine Hughes nee Foulkes...".Perhaps if this is her full name it will appear on the first wedding certificate

Yes, the scanned certificate on Ancestry is the one I put on there.
The Bridget middle name I would say I put in error as Catherine's grandaughter was named Catherine Bridget Hughes b.1888 (from her mother's mother named Bridget Austin).
Mails just been & no certificate yet, perhaps our Quantas strikes here are also holding up the mail from England.

The marriage certificate will probably not reference her mother/mother's maiden name but should give Catherine's address and father's occupation.
Sometimes the witness names give other clues to parts of the family, but you probably know all this. It's late......................hope I wake in time for the rugby.
