Looking for BRUCEs

Hello everyone

I've been searching for the BRUCE family for a while but, with the exception of the censuses, I keep drawing a blank.  Specifically the people I'm looking for are:

Joseph BRUCE, born around 1791 in Colchester (from the 1851 census)
Hannah Bruce (his wife), born around 1790 in Aldham (also from the 1851 census)

I don't know Hannah's maiden name, don't know when or where they married.  At least 2 of their children were born in Bishops Stortford, so there's a chance they married there. 

Joseph was a druggist and chemist who helped prevent part of Bishops Stortford from being burned down.

I've searched through Ancestry, Findmypast and Family Search but can't find any trace of Joseph's birth (obviously can't trace Hannah's until I have her surname). 

Any help you could give would be gratefully received!

It would help, and encourage people to help, if you would actually say what you have.

"with the exception of the censuses" ? which ones do you have?

Sorry about the lack of info - haven't done this for a while!!  So, this is what I have: 

Ellen Maria Bruce, born 10/02/1853 in Beaumont, Essex, daughter of William Bruce and Mary Brewer. 

1861 census ref: RG09/1161, Folio 90, Page 21, address Grocer's Shop, Norwich Road, Ipswich St Matthews
1871 census ref (family seem to be listed as Brown): RG10/1756, Folio 113, Page 16, address 4 Hill Street, Ipswich St Helens

Ellen married William Henry Bird on 14/06/1876 and lived in and around Ipswich until the 1911 census.

William Bruce, born 3/04/1829 in Bishops Stortford, son of Joseph and his wife Hannah (documents relating to this found in the non-conformist registers - it would appear his baptism on 31/05/1829 took place at the Water Lane Independent church in Bishops Stortford).

1841 census ref: HO107/434/2, Folio 20, Page 35, address Newton, Bishops Stortford (no occupation listed)
1851 census ref: HO107/1779, Folio 155, Page 13, address "street", Weeley, Essex (servant to a grocer/draper)
1861 and 1871 as above for daughter Ellen (grocer and grocer's assistant respectively)
1881 census ref: RG11/1871, Folio 62, Page 10, address 12a James Street, Ipswich St Nicholas (grocer)
1891 census ref: RG12/1473, Folio 13, Page 20, address 6 Navarre Street, Ipswich St Margaret (grocer)

He married Mary Brewer on 09/02/1853 and died in Navarre Street on 15/09/1897 (so, exactly 114 years ago tomorrow!!)

Joseph Bruce, born around 1791 in Colchester, Essex (this according to the 1851 census).  Married Hannah - when and where I don't know.  At least 3 of their children were baptised in Bishops Stortford.

1841 census ref: HO107/434/2, Folio 20, Page 35, address Newton, Bishops Stortford (occupation listed as druggist)
1851 census ref: HO107/1798, Folio 231, Page 35, living in East Bergholt, Suffolk (occupation listed as druggist and chemist)
1861 census ref: RG9/1159, Folio 40, Page 41, address Porter Shop Lane, East Bergholt (occupation listed as retired druggist)

He died on 24/01/1862 in Tattingstone Union, Samford Suffolk.

The only details I have about his wife Hannah come from the censuses (as listed above for Joseph).  These list her place of birth as Aldham, Essex.  She died on 04/09/1864 at 57 Fitzroy Street, Ipswich and was buried on 07/09/1864 in Ipswich Cemetery

I've found (or think I've found) 2 more since I wrote that:

Henry, born 12/04/1821 in Bishops Stortford (baptised 05/11/1824)
John, born 20/07/1824 in Bishops Stortford (baptised 05/11/1824)
Elizabeth, 12/04/1826 in Bishops Stortford (baptised 13/058/1826)
Daniel, born 21/09/1827 in Bishops Stortford (baptised 06/12/1827)
William, born 03/04/1829 in Bishops Stortford (baptised 31/05/1829) - this is my 3x great grandather

All baptisms appear to have been carried out by William Chaplin, Protestant Dispensing (?) Minister.
