How can I record only the sound off a utube video?

There are several ways to do this, but the simplest (and cheapest!) option is to use capture software to record the audio and video, and then convert the video file to audio only.

There are tools out there to download the mp4 format file video, you would then need a basic video editing program which allows you to separate the video track from the audio track, last step would be to encode the split audio into a friendly format such as MP3, if you google the topic I am sure you will find various tutorials for the job.
