Possible explanations:

She was illegitimate and born as Boucher - her mother married somebody called King and she adopted that surname

Boucher was a family surname - possibly her mothers maiden name - and she used it to disguise the fact that she was a single mother
hi carole  that does seem to be a reasonable outcome and may explain why i can't seem to find marriage or birth records for sarah   thanks for your help and advice   dave

hi carol    you gave me sarah king in 1841 in marcham with parents george and charlotte .. i have that and also sarah king with john watkins and wife harriet in 1841  st james westminster age 20 not born in county    is it possible she is in 2 places on same census  1841?  i do know she reunited with john watkins in 1861 census in bucks as housekeeper    harriet watkins  died in1852  could you advise me on this   thanks  dave
