Hi,
There are two churches currently in Shandon. St Anns the famous
Church of Ireland which has a very old grave yard attached and the Roman Catholic Cathedral of St Mary's & St. Annes which doesn't have a grave yard attached.
The St Marys graveyard you mention was situated at the foot of Shandon Street. The Cork City Council had a publication this year on
"Cork City's burial places". St Marys church was built in 1693 and "taken down" in 1879 (ref O'Shea 1943a.32). In 1879 it was replaced by another church located a half mile away at Sundays Well.
"During the 1930's the site of St Marys Shandon was cleared. The grave slabs which were supposed to be there were missing"
To see if the Church of Ireland hold burial records for St Marys you would need to contact the "Representative church body of Ireland" in Dublin to see if they have them. They don't do look ups so you would have to get some one in Dublin to search them for you(provided they have records).

That's about all you can do.
