It is not unusual to find no record of baptism or birth for children during this period, and often the only way that you will find details of all children to a couple is from the parents' death cert or the birth cert of the youngest child. I would never have known the children of my gggrandparents had they not moved from Tas to Victoria and died there.
The possible son, Charles Henry PERRY, was aged 46 when he died in Queensland in 1895, so born around 1846.

The 1860 birth cert ( or the 1856 if you are not confident that the 1860 birth is your couple) should give parents' marriage details to establish their identity and should also list all previous issue.
