But note that the address given on the marriage record is the current residence of John and Kate, and may not be their places of birth. (Kate's address is right in the centre of Dublin city).
The village of Inch is in the civil parish of the same name. Historic Church of Ireland records for parish go back to the 1720s are available in the National Archives as ref NAI M5059/60 (baptisms 1726-1866, marr. 1726-1887 & death/burials 1727 onwards)
There is a Joseph Gilbert listed on Griffith's valuation in the townland of Askinch Lower, parish of Inch dated 1853. Askinch Lower is just 5km north west of the village of Inch. This Joseph could be a farmer as he is listed as occupying house, office and land of about 76 acres.
There's a Thomas Gilbert in the townland of Crandaniel Little, parish of Kiltrisk, but this townland is located quite a distance south of Inch (25km) and near to Kilmuckridge.
There are a few other Gilbert listings in Co. Wexford that might be worth following up (a Daniel, Joseph, John & Laurence ).
