I noted on the 1881 census there was a William & Esther Willetts and family residing at Yorkley again all with a birthplace of West Dean, Glous.  This suggests the 1861 details you posted could be that same family.

On the 1871 details for James & Harriet there is a Annie E Willetts listed aged 12 so unless she has died she should be listed on the 1861
What do you think?

Yes she could have died or be living with grandmother/aunt/uncle.   I've found a few examples in my tree of a child living away from their parents from a very young age.

Yes I can agree with your comments there so checked for a death but couldn't find one so where is she?  I wonder could you please post full details of the 1861; ages, occupation etc.  Would it be possible to find James Willetts on the 1851, maybe it will help

From 1861 census:

James ,25, coal miner born Newland, Glos.  Harriet, 20, born West Dean, Glos.  William , 1, born West Dean, Glos.

No luck yet with 1851.
