Does anyone know what kind of information would likely be in Parish records from about 1780's - name of parents, etc. on birth records, or birth date on marriage records, etc.

Hi and welcome to Rootschat
Baptismal records will usually show both parents names but not a lot show mothers maiden name except in Scotland
Not all show the actual date of birth - just the date of christening
Many will show the address at which the couple were living and the fathers occupation but that's about it
Marriage entries prior to 1.7.1837 do not show fathers names.
Ages will not be shown - just "full" or "minor" indicating over or under 21yrs
