I'd think I'd look for the marriage first to try to determine father's names for Joseph and Catherine. Have you found them on the 1901 or 1911 census ?

updated is this the family in Limerick Finn Family in 1901  ?
update2 and in Cork in 1911

if the above census returns are the right ones... then I have a possible marriage for Joseph and Catherine.

 Name: Joseph Finn
 Registration District: Dublin South
 Event Type: Marriage
Quarter and Year: Apr - Jun 1894
 volume : 2 / page : 615

 Name: Kate Gleeson
 [same index details]

Their first two children were born in Dublin city so that seems to fit as a location for the marriage.

there are a few possible births for Joseph on the BMD Index - this one seems to be the best fit :
(note - see poss. marriage details later which seem to rule this particular birth out)
 Name: Joseph Finn
 Registration District: Donaghmore   (Co. Laois)
 Event Type: Birth
 Year: 1874
 volume : 3 / page : 521

Details from the marriage cert could be used to confirm this (or rule it out ).

the possible birth for Joseph mentioned above seems to be included in the extracted records collection on familysearch (Labs sub-site). See the same page reference number in the 'address'  :
(note - see poss. marriage details later which seem to rule this birth out)
 Name: Joseph Finn
Birth Place : 521, Rathdowney, Queens
 Birth Date: 02 Dec 1873
 Father's Name: Jim Finn
 Mother's Name: Mary Loughman

Even though this Joseph was born in 1873, it appears that the birth was not registered until early the following year.

The marriage I mentioned is on the IrishGenealogy Website :

 Date : 24 June 1894
Parish : St. James, Dublin (City)
 Groom : Josephus Finn
  Address : 34 Chamber Street
 Bride : Catherina Gleeson
Address: 42 Realto Buildings (possibly a typo for Rialto)

  see : Finn/Gleeson Marriage

A civil cert would give a little more details e.g. occupations.

p.s. Joseph's fathers name on the marriage record is given as Patrick - which would exclude the possible birth record I mentioned earlier.
